WHAT? Karjalanpiirakka (Karelian Pies) and Rosolli Salad.
WHY? Scandinavian food was intimidating us and Kristin stepped up for the challenge!

WOULD WE MAKE THIS AGAIN? Yes.
FAVORITE ASPECT? The rice filling within the pies was pretty delicious. Though the salad surprised me too, as I had no idea how this would taste…and it all worked out.
COOKING NOTES? For the pies, this was rye flour, spelt flour, salt and Finnish butter for the dough, and then rice, salt, water, milk and butter for a stuffing in the dough. Then there was a topping of boiled eggs and some more butter. Kris said it was pretty easy to prepare. For the salad, it was red beets, potato, sweet potato, carrots, green apple, onion and pickles. The dressing was sugar, salt, heavy cream and apple cider vinegar. I am not a huge fan of beets and wasn’t sure about the dressing, but this was surprisingly good.
