WHY? After over a week without a country meal while we were in Maine, I wanted to cook up something that I was excited to try my hand at…and excited I was for this meal!

WOULD WE MAKE THIS AGAIN? Yes.
FAVORITE ASPECT? I mean, the shawarma for sure. This was a true flavor bomb!
COOKING NOTES? Chicken thighs were marinated overnight with a bunch of spices and then served with the flatbread & garlic yogurt sauce. The flatbread was made with buttermilk and yogurt amongst other things. The sauce had tahini, garlic and mint. Take the chicken shawarma, some fresh veggies, and you have a delicious entree! Not to be forgotten, the kabsa rice. Take basmati rice, tomatoes from our garden, lemons, carrots, ginger, pine nuts, raisins and lots more spices, and you have an outstanding rice dish.
