WHY? This is the national dish of Mauritania and I knew Kris would enjoy fish like this.
HOW? Thomas Keller Ad-Hoc cookbook

WOULD WE MAKE THIS AGAIN? Yes.
FAVORITE ASPECT? The garlic-spice stuffing in the fish had a yummy flavor for sure.
COOKING NOTES? Sauté some onions and peppers, add tomato paste and add vegetable broth. Then slice some fish in the middle (we used cod) and add a garlic-spice stuffing. Boil the fish, add loads of mixed veggies (there was some eggplant, zucchini, sweet potato, peas and carrots), then cook some rice, all in the broth mixture. I was uncertain how it would come out…but we both enjoyed this! Kristin said she wants more meals like this.
